In Tokushima, we try to utilize hunted animals and activate local business, so we name our gibier meat/products “AWA GIBIER(阿波地美栄)” in the hope that the gibier business brings beautiful prosperity to the land (地means land, 美means beautiful, and 栄means prosperity). We promote gibier cuisine as well as its consumption.
AWA GIBIER is one of the local ingredients grown in rich nature of Tokushima. Once you experience its taste of nature, you can tell the difference from the meat of the farm-raised animals. Also, AWA GIBIER is securely processed under the measurement of guideline determined by Tokushima prefecture.
In order to enhance the safety and the quality of the boar meat or the venison, Tokushima prefecture formulates ”Guideline for AWAGIBIER sanitary control” for hunters and meat-processing company, in which determines common sanitary measures. Currently, there are 5 meat-processing facilities in Tokushima that follows this guideline.
Tokushima certifies ”Delicious!! gibier restaurant” that offers ”AWA GIBIER” or Tokushima made ingredients.
Not only traditional gibier cuisine but also newly created gibier cuisine are offered at these restaurants (as of March, 2016, there are 23 certified restaurants).
